Japanese fondue (Japanische Fondue Brühe)

For approx. 1l fondue you need:

  • 800ml chicken fond (Hühner Fond)
  • 1 spring onion (Schalotte)
  • 1 clove of garlic (Knoblauchzehe)
  • 1 small carrot (Karotte)
  • 3 mushrooms (Champignon)
  • 50g snow pea (Zuckerschote)
  • 3-4 table spoons soy sauce (Sojasauce)
  • a little bit olive oil
  • Spices: salt, pepper

To prepare and eat the fondue you need a fondue set. For the cheese fondue you need a ceramic pot (caquelon). But for this fondue (with fond) you need a stainless steel pot and also the rechaud and the special spits.

First you must cut the vegetables in small pieces. Put a little bit olive oil, the spring onion and the garlic pieces into the stainless steel pot and roast gently (take the normal cooking plate and not the rechaud). Then you add the other vegetables and, again, roast gently. Now you add the chicken fond, the soy sauce and the spices and boil everything up.

Now the fond is ready and you put the stainless steel pot on the rechaud. Now you can prong everything you like (e.g. potatoes, mushrooms, beef, chicken, …) and let it cook in the fond.
