Ratatouille

For 2 portions you need:

1 aubergine
1 zucchini
2 or 3 paprika
1 can pealed tomatoes
1 onion
2 garlic clove
1 tablespoon sugar
50 ml olive oil
1/2 tube tomato puree (Tomatenmark)
spices: rosemary, thyme, salt, pepper

Wash and cut the vegetables into pieces. Salt the aubergine and let them rest for 10 minutes. After that dab them.
Put the olive oil into a pan. First you roast the onion together with the zucchini pieces. Now add the paprika and roast a bit. Then add the aubergine and roast everything for about 5 minutes. Now add tomato puree, pealed tomatoes, sugar, press in the garlic clove and add the spices. On intermediate level let everything cook for about 20 minutes. If necessary add some water.
Serve it with rice or baguette. It also tastes well as a side dish to beef and lamb.
